Chai Latte Carrot Cake Baked Oats

A delicious, high protein, low sugar, Spring breakfast recipe!

Ingredients

2 scoops Chike Chai Latte Protein Iced Coffee

1 cup flour
-
½ cup sugar (or monk fruit)

1 cup rolled oats

1 tsp baking powder
-
1 tsp baking soda
-
½ tsp salt
-
2 tsp cinnamon powder
-
¾ cup Greek yogurt
-
2 eggs
-
2 shredded carrots
-
¼ cup raisins
-
¼ cup unsweetened shredded coconut
-
2 tsp vanilla
-
⅔ cup milk
-
1 scoop Chike Sweet Cream Protein Iced Coffee

1 cup powdered sugar (or powdered monk fruit)

3 tbsp milk
Glaze
Directions
Preheat your oven to 350F
In a large bowl, mix all the dry ingredients for the baked oats
Mix in the wet ingredients until fully incorporated
Pour the batter into an 8x8 baking dish
Bake for 30 minutes
Once the oats are baked and cooled, mix the ingredients for the glaze and pour over top
Cut the oats into squares and enjoy!
